Wow it's been 9 days since I posted. Been a little busy, baking cheese straws, butter tarts for Theresa's Christmas Eve get-together, some babysitting, wrapping presents, decorating, well you all know what I've been doing because you've been doing the same thing.
Watched a great Jamie Oliver Christmas special and learned a few more tips about cooking and carving your turkey. He puts vegetables and garlic under the turkey while it roasts, then for the gravy he mashes it all together and lets it cook while he does everything else. Then sieves it and adds the stock. Sounds like more flavor to me. Then to carve he takes everything off the bones with a few well-placed cuts, then slices it cross ways very neatly. That way everyone gets the crispy outside and the tender inside. I remember watching the Two Fat ladies and learning to pour boiling water over the raw skin, that really makes the skin crispy. As you can tell, I love the turkey.
Just going to go make our traditional family Christmas bread for Christmas brunch now. I love Christmas Eve!
